Oven-baked baby chicken

Protein:
1 x Free-range baby chicken (600g)
200ml Olive Oil
200ml Lemon juice
2 sprigs rosemary (stalks removed)
Salt and pepper to taste
Chicken stock (Homemade is best)
Tbl Spoon Aromat (MSG free)
• Mix all the ingredients together with the chicken set aside
• Once ingredients bind nicely pour and massage into the chicken, which has been split and flattened for the oven tray
• Leave refrigerated for two hours for full flavour impact
Method: 
• Preheat oven to 180 degrees
• Place chicken breast side up with wings tucked into an ovenproof dish, cook for 35 mins
• Use the cooked bastings to spoon over the chicken after turning it to cook for a further 10 mins or until ready (Crispy and golden brown should be one of the indicators)

2 x Large Tomatoes
1/2 Red onion
200g Feta
1 x Avo
(No leafy greens)
Dressing:
50ml Olive oil
50ml Balsamic vinegar
Salt and Pepper
Mix together
